Chapter Three · The Biryani

Sealed. Steamed.
Opened for you.

The darbar's biryani is a dum biryani in the strict sense — marinated mutton and long basmati layered in a handi, the lid sealed, the whole thing steamed in its own breath. It opens only when your order calls for it.

Enquire About the Biryani

Inside the handi — layers of saffron rice and mutton, spoon resting in the biryani

What Dum Means

Cooked in its own steam, not hurried

Dum pukht is slow cooking in a sealed vessel. The rice finishes in the steam of the meat and its marinade, so every grain carries the whole handi's flavour instead of a sauce poured over at the end. It cannot be rushed, and it cannot be kept waiting — which is why the handi is sealed to order, in batches sized to the evening.

What you get: separate, long grains — white and saffron side by side — mutton cooked to the bone, crisp browned onions over the top, and the first breath of steam when the seal breaks.

The Handi, Step by Step

Four steps, the same every evening

Step OneThe marinade

Mutton sits in its marinade until the spices are in the meat, not on it.

Step TwoThe layering

Rice and mutton go into the handi in layers, saffron through the top, browned onions between.

Step ThreeThe seal

The lid is sealed and the handi goes on a low dum — the steam does the rest.

Step FourThe rest & the opening

A short rest off the fire, then the seal breaks and the biryani is served straight from the handi.

ON YOUR PLATE

Served the way it should be

A generous plate of the dum biryani with raita in a steel katori, onion rings and lemon on the side. Add a kebab chapter before it and a kunafa after, and that is the complete darbar dinner.

What it costs: a full meal for two at Grand Darbar runs about ₹1,050 in total — biryani, breads and a sweet chapter included. For today's exact prices, ask on WhatsApp.
